My husband loves chicken wings. Me, well, not so much. However, just because I’m not a fan of the wing doesn’t mean I can’t whip up a great tasting batch of those bad boys. In fact, I have several recipes that are favorites with my husband and our boys. Give them a try and see if your own household doesn’t come screaming back for more.
Apple-Chili Marinade (serves 4-6, prep time approx. 1 hour 30 minutes)
- 2 lbs. of chicken wings
- 3/4 cup rice vinegar
- 1/2 cup soy sauce
- 1/2 teaspoon crushed black peppercorn
- 5 cloves of garlic, crushed
- 3/4 cup mayonnaise
- 1 teaspoon fresh ground ginger
- Pinch of salt
- 2 small apples, cored, sliced into thin wedges
- Zest of 1 lime
- 1 tablespoon of lime juice
- 1/2 teaspoon chili powder
In a mixing bowl, toss the wings with the rice vinegar, soy sauce, peppercorn, garlic, with 1 cup of water. Cover tightly and refrigerate for half an hour.
Preheat oven to 400 degrees Fahrenheit. Place marinade and wings into a pot and bring to a boil. Transfer to a pan, cover, and bake until tender, approximately thirty minutes. Remove and uncover. Lay wings out on a lined pan, reserving marinade. Turn on broiler and broil wings on each side about 5 minutes. Mix reserved marinade in a small bowl with mayonnaise, ginger, salt, lime juice and refrigerate. In another small bowl toss the apple slices with the chili powder and set aside.
When the wings are thoroughly cooked serve with the refrigerated dip and chili-apples on the side.
Crispy Wings (Serves 4, Prep & Cook Time 1 hour)
- 2 pounds chicken wings
- 1/2 cup flour
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/2 tablespoon paprika
- 1/2 teaspoon garlic powder
- 1 teaspoon crushed black peppercorn
- 4 tablespoons butter
Heat oven to 425 degrees Fahrenheit. In a plastic bag combine seasonings with flour and shake to mix well. Add chicken wings and shake to coat well. Line a baking sheet with aluminum foil. Melt butter in the oven onto the foil lined pan. Add wings to pan, turning to coat with the melted butter. Bake for half an hour, turn and bake an additional 15 minutes.
Brown Sugar Wings (Serves 4-6, Prep & Cook Time about 5 hours)
- 3 lbs of wings
- 1 cup of honey
- 1 cup of brown sugar
- 1 cup of balsamic vinegar
- 2 tablespoons fresh ground ginger
- 2 minced cloves of garlic
- Juice of one lime
In a large plastic bag combine wings with all other ingredients. Shake to marinate. Refrigerate for about four hours. Preheat oven to 350 degrees Fahrenheit. In a large skillet over medium heat sear the wings, about three minutes on each side. Reserve marinade. Transfer wings to an aluminum foil lined pan. Cook in oven for about a half hour, flipping frequently. Remove from oven and transfer to skillet that still contains marinade and fry until done to taste.
